1 | White onion - large diced | |
2 | Red peppers - large diced | |
2 | Garlic cloves - sliced | |
2 tablespoons | 30ml | Tomato paste |
1/4 | Parsley - chopped | |
1/2 teaspoon | 2.5ml | Freshly-grated nutmeg |
1/2 cup | 118ml | Heavy cream |
1 cup | 62g / 2.2oz | Flour - divided |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
2 | Eggs - lightly beaten (large) | |
2 cups | 474ml | Cracker meal |
Canola oil - for frying |
In large saute pan, saute ham, onions, peppers, and garlic. Add tomato paste and caramelize. Add parsley, nutmeg, and heavy cream. Sprinkle with 1/2 of the flour.
Season, cool, and grind in meat grinder. Shape into finger-sized sticks or patties. Bread using remaining flour, egg, and cracker meal.
Heat a saute pan filled 1-inch with canola oil to 375 degrees. Fry the croquettes until golden brown.
This recipe yields 6 to 8 servings.
