Ham Croquettes - {Croquetas De Jamon}

Recipe Ingredients

3 lbs 1362g / 48ozCooking ham - large diced
1   White onion - large diced
2   Red peppers - large diced
2   Garlic cloves - sliced
2 tablespoons 30mlTomato paste
1/4   Parsley - chopped
1/2 teaspoon 2.5mlFreshly-grated nutmeg
1/2 cup 118mlHeavy cream
1 cup 62g / 2.2ozFlour - divided
  Salt - to taste
  Freshly-ground black pepper - to taste
2   Eggs - lightly beaten (large)
2 cups 474mlCracker meal
  Canola oil - for frying

Recipe Instructions

In large saute pan, saute ham, onions, peppers, and garlic. Add tomato paste and caramelize. Add parsley, nutmeg, and heavy cream. Sprinkle with 1/2 of the flour.

Season, cool, and grind in meat grinder. Shape into finger-sized sticks or patties. Bread using remaining flour, egg, and cracker meal.

Heat a saute pan filled 1-inch with canola oil to 375 degrees. Fry the croquettes until golden brown.

This recipe yields 6 to 8 servings.
